If you are at all like we are, you have your "specific" soup recipes that you use all the time. Chances are, your grandmother also used these recipes, or maybe a great aunt or a family friend. Every now and then, you are lucky enough to stumble across a new recipe that is lucky enough to make it into your favorites list and this one has officially been added to our list.
One day while searching through pinterest for new recipes, my 4 year old Parker decided that he wanted to help me. There weren't many pictures that caught his eye, but he saw this one and was set. So....off we went to get the stuff for dinner.
Here is our version of the recipe...
Ingredients:
1 green bell pepper
1 onion
2 lbs ground beef
2 packets Old El Paso taco seasoning
1 can nacho cheese soup
2 cans rotel tomatoes
1 1/2 cups milk
2 tsp cumin
1 can corn
1 can pinto beans
Frito scoops
Shredded Cheddar Cheese (optional)
Directions:
In large soup pan cook ground beef with diced onion and bell pepper.
Drain. We use a strainer and paper plate. The grease drains out onto the plate and after it cools and hardens up you can just throw it away :)
Combine all ingredients except for Fritos and cheese and simmer for 30 minutes (sometimes i just let it simmer until we are ready to eat LOL). Depending on how much liquid you want for the soup, you may find it necessary to fill one of the empty cans with water and add it in, i do.
Sprinkle with cheese and serve with the Fritos! YUM!
Even my picky little children LOVED it! We have now made it twice :)
