DAY #1 Buffalo Chicken Nachos

When i was planning this blog (which is my first so be patient) i didn't really think out what my first awesome blog post would be.  I probably wouldn't have picked a recipe and especially not a simple one, LOL, i would have planned on showing you my mad skills!  But things have been hectic with Christmas closing in, so... Buffalo Chicken Nachos will be my 1st!  Here's the recipe...

Buffalo Chicken Nachos8 cups Ranch flavored tortilla chips (I used Cool Ranch Doritos)
4 cups cooked chicken shredded
1 1/2 cups Frank's Buffalo Wing sauce
water
3 cups shredded cheddar cheese
4 ounces blue cheese crumbles
1 cup chopped celery

Note: All these measurements are approximate. As with any nachos, adjust ingredients to your personal preference.


Preheat oven to 475 degrees. Spread tortilla chips on a rimmed baking sheet or in a shallow dish.


Bring wing sauce and 1/2 cup water to a simmer. Add shredded cooked chicken; heat through. Strain the chicken (reserving the sauce) and spread over ranch-flavored tortilla chips. Top with shredded cheddar.


Bake in the upper third portion of the oven until cheese is melted for about 5-7 minutes. After nachos are baked top with blue cheese, chopped celery and the reserved wing sauce.


NOW.......I ALWAYS ALTER RECIPES!  (i am famous in my family for reading every single review a recipe has and altering to make it better, or i take 2 recipes for the same thing and mash them together).

Here's What i changed....

~Instead of Doritos i used Tostitos Hint of Pepper Jack.
~I don't like raw celery so i sauted it for a few minutes before adding the sauce, water, and chicken to pan.
~I used a Pepper Jack cheese / Cheddar cheese mix
~I used canned chicken breast because i was in a time crunch.
~We don't like Bleu Cheese at all so i left the crumbles off.
~I added chopped onions before baking.




Overall it was pretty good!  The buffalo sauce was a little over powering so next time i think i might just leave the sauce off at the end.  The great thing was that it was very easy and would be great for a night when we just need a quick meal made from things on hand.
